Zesty Citrus-Marinated Langostino Delight

Ingredients
- 3 tablespoons olive oil
- 4 whole cloves
- 3 cups water
- 1 cup dry white wine
- 2 thin slices of medium onion
- ½ carrot peeled and thinly sliced
- 1 thin slice lemon
- 2 sprigs parsley
- ½ teaspoon dried thyme
- 1 bay leaf
- ½ dried red chile pepper seeded
- 6 peppercorns
- Salt
- 1 pound medium or large langostinos/prawns shells intact
Instructions
- In a medium saucepan, combine olive oil, cloves, water, white wine, onion slices, carrot slices, lemon slice, parsley sprigs, dried thyme, bay leaf, dried red chile pepper, peppercorns, and a pinch of salt.
- Bring the mixture to a boil over high heat, then reduce the heat to low and simmer for about 10 minutes.
- Add the langostinos/prawns to the simmering liquid, return to a gentle boil, and cook until the langostinos/prawns turn pink, approximately 2 to 3 minutes.
- Remove the langostinos/prawns, keeping the cooking liquid.
- Peel the langostinos/prawns and place them in a medium bowl.
- Bring the reserved cooking liquid to a boil over high heat and let it cook until reduced by half.
- Allow the liquid to cool.
- Discard the bay leaf, then pour the reduced liquid over the langostinos/prawns, stirring to coat evenly.
- Cover the bowl and refrigerate for at least 24 hours.
- Serve the zesty citrus-marinated langostinos/prawns cold for a refreshing culinary experience.
