Crispy Sardines with Garlic Breadcrumbs and Pine Nuts
Crispy sardines served over golden garlic breadcrumbs with sweet tomatoes, toasted pine nuts, and a hint of chili and lemon for a Mediterranean-inspired dish.

Ingredients
- 2 tins sardines in olive oil
- 50 g pine nuts lightly toasted
- 3 garlic cloves chopped
- ¼ teaspoon crushed chilies
- 200 g small sweet tomatoes Piccolo variety, ideally
- Salt to taste
- ½ lemon juiced
- 2 slices basic white bread
- Olive oil for frying
Instructions
- Make the breadcrumbs by pulsing the white bread in a food processor until fine.
- Heat a generous amount of olive oil in a frying pan over medium heat.
- Add the breadcrumbs and fry until golden brown, stirring occasionally, for about 10 minutes.
- Transfer the breadcrumbs to a small bowl and set aside.
- In the same pan, add the chopped garlic, crushed chilies, and tomatoes.
- Cook until the tomatoes soften and start to break down.
- Add the sardines and season with salt.
- Fry gently, trying not to break the fillets, until they become slightly crispy.
- Squeeze fresh lemon juice into the pan.
- To serve, place the crispy breadcrumbs on the bottom of a plate, top with the sardines and tomatoes, and finish with toasted pine nuts.
