Crispy Sardines with Garlic Breadcrumbs and Pine Nuts

Ingredients

  • 2 tins sardines in olive oil
  • 50 g pine nuts lightly toasted
  • 3 garlic cloves chopped
  • ¼ teaspoon crushed chilies
  • 200 g small sweet tomatoes Piccolo variety, ideally
  • Salt to taste
  • ½ lemon juiced
  • 2 slices basic white bread
  • Olive oil for frying

Instructions

  • Make the breadcrumbs by pulsing the white bread in a food processor until fine.
  • Heat a generous amount of olive oil in a frying pan over medium heat.
  • Add the breadcrumbs and fry until golden brown, stirring occasionally, for about 10 minutes.
  • Transfer the breadcrumbs to a small bowl and set aside.
  • In the same pan, add the chopped garlic, crushed chilies, and tomatoes.
  • Cook until the tomatoes soften and start to break down.
  • Add the sardines and season with salt.
  • Fry gently, trying not to break the fillets, until they become slightly crispy.
  • Squeeze fresh lemon juice into the pan.
  • To serve, place the crispy breadcrumbs on the bottom of a plate, top with the sardines and tomatoes, and finish with toasted pine nuts.
