Ceviche, while not originally of Mexican origin, is a classic spicy marinated fish cocktail found all along Mexico's extensive coastlines. The dish consists of raw fish marinated in fresh lime juice, which "cooks" the fish by the chemical action of the acid in the lime juice. The ice-cold marinated fish is then mixed with the other ingredients to complete the dish. Only absolutely fresh fish should be used for ceviche. Red snapper, rock cod, and sea bass are typical choices, as well as scallops, because they are firm fish that keep their texture.
