Generously spray one side of each slice of white bread with canola oil.
Place the bread slices, oil side up, in the air fryer basket.
Toast at 370°F for 2 minutes.
While the bread is toasting, add the shrimp, egg, mayonnaise, parsley, potato starch, ginger, soy sauce, fish sauce, and sesame oil to a food processor.
Process continuously until it forms a smooth paste.
Remove the toasted bread from the air fryer and flip them over so that the oiled side is facing down.
Spread the shrimp paste evenly over each slice, covering all the way to the edges.
Spread sesame seeds on a flat plate and press the bread, shrimp side down, into the sesame seeds.
Cut each piece of bread into four triangles or sticks, then place them into the greased air fryer basket, shrimp paste side up.
Generously spray the shrimp paste with oil.
Air fry at 330°F for 4 to 5 minutes, or until the bread is crispy and the shrimp turns pink.
