Mix Carob and Honey:
In a mixing bowl, combine the carob powder and honey.
Stir until well blended and smooth.
Add Nut Butter:
Add the almond or cashew butter to the carob-honey mixture.
Stir until all ingredients are thoroughly combined and a dough-like consistency forms.
Form Balls:
With slightly wet hands, scoop out small portions of the mixture and roll them into balls between your palms.
Aim for approximately 1-inch diameter balls.
Roll in Coconut:
Roll each ball in unsweetened coconut until fully coated.
This will give them a delightful texture and flavor.
Chill:
Place the coated balls on a plate or baking sheet lined with parchment paper.
Transfer the plate or baking sheet to the freezer and chill the balls for at least 30 minutes, or until firm.
Serve:
Once chilled, remove the carob energy balls from the freezer.
Serve them immediately as a refreshing cold treat, or store them in a freezer-safe container for later enjoyment.
Storage:
Store any leftover carob energy balls in a sealed bag or container in the freezer for longer shelf life.
They can be enjoyed straight from the freezer or allowed to thaw slightly before serving.
Notes / Tips / Wine Advice:
These sweet carob energy balls pair nicely with a cup of herbal tea or a glass of almond milk for a delightful afternoon treat.
