Heat a greased stovetop griddle over high heat.
Reduce the heat to medium.
Add the oyster mushrooms to the griddle, drizzle them with olive oil, and sprinkle with finely chopped garlic.
Press the mushrooms with the back of a pancake turner to flatten.
Turn the mushrooms, season with salt to taste, and cook until tender.
Sprinkle the grilled oyster mushrooms with finely chopped parsley.
