If using a spiralizer, spiralize the potato.
If not, cut the potato into thin ⅛-inch-thick matchsticks.

Pat dry with paper towels.
In a large bowl, combine the spiralized or sliced potatoes with vegetable oil, hot smoked paprika, garlic powder, salt, and pepper.
Toss until well coated.
Preheat the air fryer to 400°F (200°C).
Transfer the seasoned potatoes to the air fryer basket and cook for about 15 minutes, shaking the basket halfway through, until the potatoes are browned and crisp.
Meanwhile, in a blender, puree the crushed tomatoes, apple cider vinegar, dark brown sugar, Worcestershire sauce, and hot sauce until smooth.
Pour the tomato mixture into a small saucepan or skillet and simmer over medium heat until reduced by half, about 3 to 5 minutes.
Transfer the homemade ketchup to a bowl and let it cool.
Remove the spiralized potato nest from the air fryer and serve hot with the homemade spicy tomato ketchup.

Wine Advice:
The bold flavors of the spicy paprika and homemade ketchup call for a wine with some sweetness and acidity to balance them out. Try a chilled rosé or a fruity Riesling.
