  • 1 large carrot peeled and julienned
  • ¼ cup apple cider vinegar
  • ½ teaspoon ground ginger
  • teaspoon cayenne pepper
  • ½ small brown onion peeled and sliced into half-moons
  • 1 medium parsnip peeled and diced
  • 1 teaspoon avocado oil
  • 110 grams extra-firm tofu drained and cut into 6mm cubes
  • ½ teaspoon five-spice powder
  • ½ teaspoon chilli powder
  • 2 teaspoons fresh lime zest
  • 1 cup fresh rocket
  • ½ cup steamed riced cauliflower
  • 1 small avocado peeled, pitted and diced
  • 1 ½ tablespoons pine nuts

Instructies

  • Preheat air fryer at 180°C for 3 minutes.
  • In a small bowl, combine carrot, apple cider vinegar, ginger and cayenne.
  • Set aside.
  • In a separate small bowl, combine onion, parsnip and avocado oil.
  • Set aside.
  • In a medium bowl, combine tofu, five-spice powder and chilli powder.
  • Place onion mixture in air fryer basket lightly greased with olive oil.
  • Cook for 6 minutes.
  • Add tofu mixture and toss.
  • Cook for an additional 8 minutes.
  • Stir in lime zest.
  • Prepare Buddha Bowls by evenly distributing rocket, drained carrot juliennes, riced cauliflower, avocado, pine nuts and tofu mixture between two medium bowls.
  • Serve.

Instructies

To make Coleslaw:

  • In a medium bowl, combine all ingredients.
  • Refrigerate covered until ready to use.

To make Jackfruit Wraps:

  • Preheat air fryer at 190°C for 3 minutes.
  • Toss ⅓ cup barbecue sauce with jackfruit in a medium bowl.
  • Place jackfruit in air fryer basket lightly greased with olive oil and cook for 5 minutes.
  • Shake basket.
  • Cook for an additional 5 minutes.
  • Transfer jackfruit to a medium bowl.
  • Add remaining sauce.
  • Using two forks, pull apart jackfruit until it resembles pulled pork.
  • Serve jackfruit on lettuce leaves topped with coleslaw.

  • 2 lemon wedges

Instructies

  • Combine all ingredients except lemon wedges in a medium bowl.

  • 6 large leaves iceberg lettuce
  • 1 cup coleslaw mix shredded cabbage and carrot

Instructies

To make Spicy Mayonnaise:

  • In a small bowl, combine all ingredients and refrigerate covered until ready to use.

To make Salsa:

  • In a medium bowl, combine all ingredients and refrigerate covered until ready to use.

To make Avocado Fries:

  • Preheat air fryer at 190° for 3 minutes.
  • Whisk together egg substitute and almond milk in a small bowl.
  • Combine almond flour and flaxseed in a separate shallow dish.
  • Dip avocado fries in egg substitute mixture.
  • Coat in almond flour mixture to coat.
  • Place half of avocado fries in ungreased air fryer basket.

Altering This Recipe

The cod can be subbed out for any flaky whitefish, such as coral trout, bass or barramundi. If you want a little more kick, add a pepper such as a jalapeño, diced, to your salsa. And, if you like corriander, switch out the parsley for some of this fresh herb!
